Gamonéu.
A smoked, cave-aged blue from the heart of the Picos de Europa: three milks, a whisper of woodsmoke, a fine bluing only at the edges — one of Spain's rarest and most prized cheeses. Buttery and firm with a persistent nutty, lightly spicy finish and a distinct woodsmoke thread; the blue is gentle and mostly at the rim, more suggestion than the full pungency of Cabrales.

Gamonéu is made in the Asturian councils of Onís and Cangas de Onís, in the Picos de Europa, in two forms: del Puerto, made seasonally in the high mountain cabins through the summer grazing, and del Valle, made year-round in the valley dairies. Its character comes from three things: raw milk — a blend of cow, sheep and goat in the old transhumant way; a light smoking of four or five days over local wood, which gives the rind its toasted-sienna colour; and a slow maturing in natural mountain caves, where the surface takes on reddish, greenish and bluish tones and a slight interior bluing forms at the edges.
The result is a fatty, aromatic, friable cheese — smoke-forward, only lightly blue — and one of the most valued (and hardest to find) cheeses in Spain. It received EU PDO protection in 2008.

Rest
Take it out about ≈1 h before serving — cold stiffens the fat and locks up the aromas; cool room temperature is when the flavour shows up.
Cut
Use a thin or wire knife and wipe it between cuts; aim for wedges that share the veins evenly.
Store
Wrap leftovers in cheese paper or wax paper — never cling film, which suffocates the rind — and keep them in the warmest part of the fridge.
Rule of thumb: the softer and riper, the longer it needs. Thick pieces need longer than thin — and don't leave cheese out much past two hours.
