How it's made.

Gubbeen has been made by the Ferguson family on their farm at Gubbeen, near Schull on the West Cork coast, since 1979 — a founding cheese of Ireland's modern farmhouse movement.
The milk of their own herd, which includes rare native Kerry cows, is made into wheels whose rinds are washed as they ripen, developing a pink-gold bloom and a gentle, earthy aroma. The farm became a fixture of Irish food culture, and its rind proved so distinctive that microbiologists found a previously unknown bacterium living on it.

Slice in wedges with the rind on — or for a very ripe wheel, take off the top and spoon.
Store
Wrap leftovers in cheese paper or wax paper — never cling film, which suffocates the rind — and keep them in the warmest part of the fridge.
Rule of thumb: the softer and riper, the longer it needs. Thick pieces need longer than thin — and don't leave cheese out much past two hours.
