Mild, milky and lightly salty, firmer and less watery than fresh mozzarella; its whole reason for being is the melt — stretchy, even, and burnished under heat.

Fresh mozzarella is a soft, wet Italian pasta filata cheese meant to be eaten within days. Low-moisture mozzarella is its American reinvention: as pizza swept the mid-20th-century United States, cheesemakers (Wisconsin and the wider Midwest to the fore) dried and firmed the curd, salted it a little more, and pressed it into blocks that would shred, ship, keep, and — above all — melt and brown predictably on a pie.
The stretched curd still gives that signature pull, but the lower moisture is what makes it the workhorse "pizza cheese" of pizzerias and freezers alike. It's a distinct thing from Italian fior di latte or Mozzarella di Bufala Campana — a cousin engineered for the oven.
