Mozzarella fior di latte (flower of milk) is the cow's milk version of mozzarella, distinct from the buffalo milk PDO Mozzarella di Bufala Campana.
It has been made in Campania since the 16th century and is the primary pizza cheese in Neapolitan tradition. While widely produced across Italy, the Campanian versions made near Naples are considered superior.
