Parmigiano-Reggiano Stravecchio refers to wheels aged 30+ months (sometimes 36 or 40+), beyond the standard 12-month minimum.
These exceptional wheels are selected by the Consorzio for particularly high quality and develop an extraordinary depth of flavor with crunchy tyrosine crystals. The PDO was granted in 1996 and the cheese has been made since the 12th century.
