The mountain cheese behind frico: sweet and supple young, deep and nutty with age, from the Alpine northeast of Italy — a single cheese that spans a whole range of moods. Young, it's mild and milky with a clean lactic sweetness; aged, it turns full, nutty and gently piquant, the paste firming from supple to grainy and crumbly under a darkening rind.

Montasio takes its name from Monte Montasio and its high plateau in the Julian and Carnian Alps, where Benedictine monks at the abbey of Moggio Udinese are credited with refining the cheese from the 13th century. It's a cooked, pressed cow's-milk DOP made only in Friuli-Venezia Giulia and the neighbouring provinces of eastern Veneto, from milk that's raw or thermised but never pasteurised — a "soft" technology, in the Consorzio's words, that keeps the native microflora alive.
Aged a minimum of 60 days, it moves through named stages: Fresco (about 60–120 days), mild and elastic; Mezzano/Semistagionato, fuller and rounder; Stagionato (10–18 months), firm and piquant; and Stravecchio (18 months and beyond). It's the cheese for frico — the Friulian pan-crisp, whether the pure-cheese croccante or the potato-enriched morbido — and a fine table cheese at every age.

Take it out about ≈1 h before serving — cold stiffens the fat and locks up the aromas; cool room temperature is when the flavour shows up.
Cut
Cut thin half-moons or batons from the wedge; trim waxed or inedible rinds as you go.
Store
Wrap leftovers in cheese paper or wax paper — never cling film, which suffocates the rind — and keep them in the warmest part of the fridge.
Rule of thumb: the softer and riper, the longer it needs. Thick pieces need longer than thin — and don't leave cheese out much past two hours.
