Colombia's one true aged cheese: firm, pale, gently sour-tangy — the only matured Colombian cheese with a protected denomination of origin. Mild and lightly acidic with a faint sour-cream tang; a firm, supple, sliceable body that holds its own on a board and melts kindly in the pan.

In a country whose cheeses are overwhelmingly fresh, Paipa stands almost alone: a matured cow's-milk cheese from the highlands of Boyacá — the towns of Paipa and Sotaquirá — with roots in the region's colonial dairy tradition.
It is the only Colombian cheese to hold a protected Denominación de Origen, granted in recognition of its territory, its method, and the mountain milk behind it. Lightly pressed and aged for a month or more, it develops the gentle acidity and firm, sliceable body that set it apart from the fresh cuajadas and quesos costeños of the rest of the country — good on a board, good melted, and a point of real regional pride.

Take it out about ≈1 h before serving — cold stiffens the fat and locks up the aromas; cool room temperature is when the flavour shows up.
Cut
Cut thin half-moons or batons from the wedge; trim waxed or inedible rinds as you go.
Store
Wrap leftovers in cheese paper or wax paper — never cling film, which suffocates the rind — and keep them in the warmest part of the fridge.
Rule of thumb: the softer and riper, the longer it needs. Thick pieces need longer than thin — and don't leave cheese out much past two hours.
