Rubing — literally 'milk cake' — is made by the Bai and Sani peoples of Yunnan province in China's mountainous southwest, one of the few corners of the country with a long cheesemaking tradition.
Fresh goat's milk is curdled with a souring agent, pressed into firm white slabs, and eaten within days: sliced and pan-fried, grilled over coals, or steamed with ham. For most outsiders it is a genuine surprise — proof that China has its own cheese culture, centuries old, thriving in the markets of Dali and Kunming.
