Rygeost is a traditional Danish fresh cheese that is cold-smoked over straw, giving it a distinctive golden color and gentle smoky aroma.
It has been made on the island of Funen (Fyn) since at least the 19th century and is particularly associated with the southern Danish countryside. It is one of the few genuinely smoked fresh cheeses in European tradition.
