Mild and lactic, with fresh cream up front and a clean, gentle salt; an elastic, yielding body that melts to silk and never asserts itself, which is exactly the point.

Cremoso is Argentina's everyday cheese — by most accounts its most-consumed variety, close to 40% of domestic production.
It descends from the northern-Italian crescenza/Quartirolo family, carried over by Italian immigrants and localised in the dairy towns of Santa Fe, Córdoba and Buenos Aires in the early 20th century; the Código Alimentario Argentino later fixed it as a fresh cheese of 45–55% moisture, with cream permitted for extra richness. Made fast and eaten young, rindless and vacuum-packed, it began life as the companion to dulce (quince or sweet-potato paste) in the dessert called queso y dulce, and has since become the default melting cheese for pizza a la piedra and fugazzeta, sandwiches, and milanesa con queso.
