Water buffaloes were introduced to the Italian Peninsula, likely from Asia or Africa, between the 6th and 7th centuries AD. The first documented reference to buffalo milk cheese in Campania appears in a 12th-century account from the monastery of San Lorenzo in Capua.
Mozzarella's characteristic pasta filata technique — stretching and spinning the curd in hot water — was refined in the area around Caserta and Salerno. Receiving EU PDO status in 1996, 'Mozzarella di Bufala Campana' can only be made with Italian Mediterranean buffalo milk within the defined geographic zone. Annual production exceeds 44,000 tonnes.
