Burrata di Andria is a cloud of butter and milk that dissolves on your tongue—a rindless pouch of fresh mozzarella concealing a molten center of cream and delicate shreds. The aroma is gentle and milky, almost sweet, while the texture offers the contrast of a tender exterior against the impossibly luxurious, almost liquid center. It tastes like fresh cream captured at its most ephemeral moment, with a subtle richness that never becomes heavy.

Burrata di Andria originated in the early 20th century in Andria, Apulia. Lorenzo Bianchino Chieppa is credited with creating it around 1956, though some accounts place it earlier.
It was developed as a way to use up cream and mozzarella scraps (stracciatella). The PGI was granted in 2016, distinguishing authentic Apulian burrata.
