Stracciatella is the secret heart of burrata, set free: hand-torn shreds of fresh stretched curd drowned in thick cream, eaten by the spoonful. It's luxuriously milky and faintly sweet, with a gentle buffalo tang — arguably the most decadent fresh cheese Italy makes.

Stracciatella — from stracciare, 'to tear' — was born in Puglia in the early twentieth century, traditionally credited to the cheesemakers of Andria, as a way to use leftover scraps of pasta filata curd: torn into ribbons, bathed in fresh cream, and sold immediately. It soon became the filling of burrata, but Puglians have always eaten it straight, spooned over bread, pasta, or simply from the tub.
The buffalo-milk version brings extra richness and tang. Fierce freshness is the whole game — stracciatella is best within days of being made.
