Why portions matter — and how ours work.
Every cheese in the catalog carries a base ounces-per-person figure tuned to its richness: 1.5 oz for a hard alpine, 0.9 oz for a salt-forward blue, 1.0 oz for a soft washed rind.
Tasting is 0.7×. Cocktail graze is 0.8×. Dinner is the baseline 1×. Picnic is 1.1×. Choose once; the whole board recalculates instantly.
Mild palates trim everything 10%. Bold palates lean in 10%. Per-cheese nudges with ± buttons stay sticky across changes.
