Consider adding a goat, a blue, a bloomy or washed, one more cheese — variety across milks and textures is what makes a board read as a board.

Family-level guidance — soft and ripe needs longest; cold mutes the flavour. They all peak together.

Serve & present

Taste light to bold: begin with the freshest, mildest cheese and finish with the blue or the most pungent, so each gets its moment. Give each cheese its own knife, and leave a little space between them so the flavours don’t mingle on the board.

The method

Why portions matter — and how ours work.

01
Per-cheese base × guests.

Every cheese in the catalog carries a base ounces-per-person figure tuned to its richness: 1.5 oz for a hard alpine, 0.9 oz for a salt-forward blue, 1.0 oz for a soft washed rind.

02
Occasion multiplier.

Tasting is 0.7×. Cocktail graze is 0.8×. Dinner is the baseline 1×. Picnic is 1.1×. Choose once; the whole board recalculates instantly.

03
Palate trim.

Mild palates trim everything 10%. Bold palates lean in 10%. Per-cheese nudges with ± buttons stay sticky across changes.
